    Oil pressure

    I know that the OE guages can give strange readings at the best of times, but I'm getting concerned as my standard guage often reads between 5-6 and doesn't really move much once the engine has warmed up. Then at times it'll read 4 then move down to 2 when warm.

    If I bought an aftermarket guage would it be a straight swap into the banjo bolt?

    If your engine (water) is warm. That doesn't mean that the oil is warm too.
    For a cold oil 5-6 (max) is normal. If the oil is really warm it should show around 1 bar @idle.
