Head bolts = 60
Manifold bolts = ???
I have never torqued my manifold bolts but the head is off anyway so may as well tighten them up properly now!

Isn't there studs in the head and then nuts that are then tightened up to hold the manifolds on, I have seen some 5s with one bolt, closest to the turbo end.

Studs & nuts on manifold. I just do them up without using a torque wrench.

dont over tighten them you will rip the thread out of the head.
