would i run into any clearance problems if i ran some 16"x7.5" wheels with an offset of et40.?

yes . possibly hit the inner arch with a 40 offset . i had some 7x17 with a 38 offset . they rubbed on the caliper . so had to put 3mm spacer to get it back to the 35 offset .

higher the number = closer to the inner arch they will be
lower the number = closer to the outer arch they will be . :agree:

so now im trying to figure out with the wheels being 7.5" if i can use 5mm spacers and not foul the outter arch..??

with a spacer, you should be fine . although you may have to shave a bit off the bodykit mouldings . but it won't be much . all depends on the other factor . how much the car is lowered . and what size tyre you use .
my mate adam has 16inch rims and has 195/45/16 tyres . they rub a little when he carrys people in the back . but he hasn't shaved the arches . hope this elps :agree::coffee:
