Is there any way they can be tested to see if they are releasing the correct pressure? or is it a case of they work or dont work? also if mines faulty where is best to get one?

Fuel pressure, can be checked with a test fuel pressure, connecting the fuel pipe comes out of the regulator. and you can see the current pressure.
If your fuel regulator Manually adjust you can adjust the pressure accordingly.

this is all very well for a car with a fuel rail to connect to but with these you cannot run the car and test the pressure at the same time as i need to know if it isnt fueling properly when it gets higher up the rev range

Tee a gauge into the fuel pipe to the carb & take it out for a run, that gauges are cheap enough off ebay.

Is it possible for the fpr to go wrong and make the pressure too high causing the carb to run too rich?? Or would it simply just do the opposite??

If the return pipe to tank was restricted it could bump the fuel pressure up. Ive had one where the diaphragm split & filled the carb up with fuel from the top, engine wouldnt run at all though.
